My Favorite Dessert

This is my go-to dessert when I want something impressive and delicious, that doesn’t take too much time and effort.  Juicy strawberries are encased in a feather-light, crisp, sweet crust and served warm with a divine raspberry sauce and a cloud of whipped cream.

The recipe may look daunting, but it’s deceptive.  If you watch the video, you’ll be able to make this dessert without the written instructions.

Irish Inspiration Around the World

St. Paddy’s Day is here, and while corned beef and cabbage is an obvious culinary tribute, I’ve been craving a delicious Irish Beer and Cheese Bread that Marilyn learned to make growing up in Texas (which is a country of its own). Plus, even though you’re reading this on St. Paddy’s, you can still get in the kitchen today in time for an Irish-inspired complement to dinner tonight.   
Irish Beer and Cheese Bread is like a biscuit, but it’s baked in a loaf pan (translation: it’s quick and easy to make). It’s especially good served with a crisp vegetable salad, or with a creamy soup like potato and leek. But the leftovers are the best…toasted, with bacon and eggs.

Cornish Game Hens: Perfect for One or Two Bites

While shopping in the grocery store the other day, I came across Cornish game hens. I have not roasted or even tasted the little guys in a couple of years. Not sure why not…they are a perfect protein solution as a quick dinner for one or two.

In a short period of time you have a crispy, tasty bird for dinner alone or with company that requires no heavy lifting in and out of the oven. In celebration of spring I’ve paired the hen with baby carrots roasted whole, alongside the bird. You could use regular slim carrots halved lengthwise.  Enjoy a little taste of Spring!

These tiny Italian meatballs are so cute you’ll just want to eat them up – and you should!  Versatile and perfectly sized for popping, polpetti have a tendency to disappear before leaving the kitchen. And those that escape immediate consumption can be put to good use in a multitude of dishes; so make a ton and have a ball! (…or ten.)
