Ode to Crunchy
People often ask me what my favorite food is. Truth is, I don’t have one. I have a thousand. I’ve known very few people who loved one food so much they couldn’t get enough of it. My uncle was one of those people. He loved crunchy peanut butter so much he ate it straight out of the jar with a spoon.
Uncle Gerald was a bit of a connoisseur of peanut butter. In just one bite, he could tell you the type of peanuts and where the crop came from. He was a man of true grit and true love…a pillar of strength and calm. He lived life passionately. And when I think of him, I remember a happy blur of celebrations, storytelling, guitar playing and good food.
I created this recipe as homage to you, Uncle G. I’ll carry on the peanut butter tradition until we meet again.
The heart and soul of any recipe is its hero ingredient. This simple recipe cuts through all the clutter and focuses on the true grit…crunchy peanut butter.
Crunchy Peanut Butter Cookies
These flourless cookies are a denser, richer version of the traditional peanut butter cookie.
2 cups all-natural crunchy peanut butter (or one 16-oz. jar)
2 cups brown sugar
Pinch of salt
2 eggs, lightly beaten
Preheat oven to 350 degrees.
Thoroughly combine all ingredients to form a sticky dough. Roll into 1 ½-inch balls. Place onto a lightly greased baking pan. Make a criss-cross design on each cookie with a fork dipped in sugar. Bake for 8 to 10 minutes. Remove from oven and cool on baking pan for 1 to 2 minutes before carefully transferring to rack to cool completely. Yield: 2 dozen

It is a beautiful testiment and food memory of a wonderful man from a devoted neice who supplied him with lots of jars of Adams Crunchy peanut Butter and other kinds of crunchy nut butters to try. I'm anxious to try the recipe. It sounds deliciously CRUNCHY. Love and Hugs
