Autumn Grilling, Cayman-style

Each January, Chef Eric Ripert and Food & Wine magazine host the Cayman Cookout at The Ritz-Carlton, Grand Cayman – a festival celebrating food, wine and the beauty of the Caribbean. The roster of chefs is impressive and features Anthony Bourdain and Jose Andres and, of course, Eric Ripert.
I was honored to be amongst this cadre of chefs from around the world. The first night’s dinner, called The Barefoot Barbecue, is on Seven-Mile Beach. As I manned the grill, sandwiched between Eric and Tony, I could hear the waves crashing, steel drums rumbling and wine glasses clinking. It’s an evening, a view and company I’ll never forget.
My contribution to this walk-around event was Grilled Niman Ranch lamb loin chops with a “Hong Kong-style Gremolata.” The boys have been asking me to make this dish at home on the Weber Kettle. It’s actually quick and easy, so give it a try.

Grilled Lamb Loin Chops with Hong Kong-style Gremolata
1 cup chopped scallions
1/2 cup thinly sliced jalapenos, red and green
1/2 cup thinly sliced garlic
1/2 cup julienned ginger
Cornstarch
4 to 8 lamb loin chops, depending on whether you’re making an appetizer or an entree
Vegetable oil
Sea salt
Ground pepper mix (black, green, red and Szechwan), to taste
1 cup cilantro leaves
4 teaspoons Chinese red vinegar (available at Chinese grocers)
Preheat the outdoor grill.
Meanwhile, to make gremolata, combine scallions, jalapenos, garlic and ginger in medium bowl. Dust with a little cornstarch and fry the mixture for 30 seconds or until garlic is golden brown. When cool, season to taste with salt and pepper and set aside.
Rub the chops with the vegetable oil, salt and pepper and grill for 7 minutes on each side, or until the chops reach an internal temperature of 130 degrees. Cooking time depends on the thickness of the chops and the intensity of heat.
Spoon gremolata on a platter, top with lamb chops and cilantro; drizzle with red vinegar.
Note: Chinese red vinegar is a sweet rice wine vinegar and is available in specialty Asian grocers. Seasoned rice wine vinegar can be substituted.

Cayman Islands is an exciting place to visit. Interestingly, you will find the there are some amazing restaurants along the world famous Seven Miles Beach. The dish that is displayed in the photo is just a sample of the delightful fresh seafood dishes you will enjoy on this beach in Grand Cayman.
