Mummy Pizzas

By traditional standards, our urban neighborhood isn’t the best for trick or treating. In other words, there are only a few houses on each block that hand out candy. But somehow the kids always come back with enough loot to last a month.
I always worry about too much candy and not enough nourishment, so this year I’ve decided to make pizza with a scary twist. These pizzas are quick and easy to make even if there’s a crowd of kids to feed. If you can’t bake enough pizzas in one batch for everyone, start each child with a few wedges to keep them busy while the next batch is in the oven.

Mummy Tortilla Pizzas
12 (6-inch) flour tortillas
1 jar (12 to 16 ounces) pizza sauce
2 packages (12 sticks per package) Mozzarella cheese sticks
Spanish olives stuffed with pimiento, sliced crosswise
Preheat the oven to 375°F. Using a serrated knife, cut each cheese stick lengthwise in 4 thin slices, these will make the mummy’s bandages. Slice the olives crosswise, these will make the eyes.
Lay out the tortillas on cookie sheets and spread a spoonful of pizza sauce on each tortilla. Arrange 2 olive slices at 12 o’clock for the eyes. Arrange the cheese slices in a haphazard way to make bandages. Bake for 3 to 5 minutes, or until the cheese is melted. Serve the pizzas whole at the table so the kids can enjoy their spooky fare before cutting into wedges.
Note: Adjust the number of tortillas and toppings based on the number of kids at the table. With a small salad, one pizza is enough per person. The pizzas will cool off quickly since the tortillas are thin.
