Corn Pudding for a Harvest Moon

Harvest moon is that very special time of year when a big, bright, orange moon rises around sunset. Harvest moon, sometimes known as corn moon, got its name by the light it provided farmers, which helped them work late into the night at the peak of harvest.

These nights, when moon meets sun, are a joy for our boys. For them, this time of year means pumpkin patches, corn mazes and hayrides. For the family table, it means taking advantage of the wonderful fall produce…apples, squash, sweet potatoes, pumpkin and the last few days of corn season.

There’s a giant pumpkin farm, far from the bustle of the city, where we go for all of the above food and fun. It takes all day by the time we go, spend time and come home, but it’s worth the travel.

Cook Simply in the Summer

Summer is one of those seasons where it’s easy to cook for just one or two. For one thing, you have the most amazing vegetables, fruits and herbs at this time of year. When you have the best the season has to offer, cooking simply is really all that is required!

It’s the season of the corn on the cob. There are so many ways to prepare it but the cardinal rule is just keep it simple. See the photo below for a quick and easy way to get those crunchy kernels off the cob.

Being Decisive About Corn

Among cooks, when it comes to grilling corn, there are many ways and little consensus. In the past, I’ve been of no help, tossing ears onto the grill any which way, with the only goal being to produce a platter of relatively cooked corn on the cob to be done at the same time as the main event meat. It’s an insult to maize everywhere.

So today, with fresh native corn and a charcoal grill at my disposal, I decided it was time to be decisive about my corn.

In the Mood for Chowdah

I seem to be in a fish mood as of late. And sometimes, what is available to me as “fresh” is not looking all that great… or that fresh.

Not all fish keeps well frozen but some companies do get it right. One is Cozy Harbor of Maine’s frozen lobster meat, It’s the perfect dinnertime solution for making fish cakes, lobster salad or yes, lobster chowdah.

Also, since all of the work is done for you (cooking, shelling and cleaning), you have more time to actually enjoy this delicious concoction.
