The Importance of Breakfast

Firehouse Eggs

Our youngest son, Nicholas, looked at me with a wrinkled up nose and asked, “Why do we have to start every day eating?” I replied, “It’s called breakfast little man! ‘Breaking the fast’ since the last meal you ate.”

It’s hard for an energetic four-year-old to understand that food equals energy. After many failed attempts to nourish our boys in the morning, we’ve finally found a favorite that everyone enjoys.

“Firehouse Eggs” was one of Andrew’s favorites as a kid. Simply cut a hole in the center of a piece of bread using a glass cup or round biscuit cutter. Italian or French bread works best but sandwich bread is also fine. Heat a small amount of butter or olive oil in a skillet and toast both sides of the bread, then crack an egg into the center and cook until the egg is set.

For the boys, we cook the yolk well. For us, we cook the yolk soft and then add a little chopped tomato and fresh basil for a delicious breakfast bruschetta.

Firehouse Eggs plated with a little fresh fruit gives them the energy they need for a day of active learning or summer play.

This actually looks really good. I think my tastes are in line with Nicky, I will be looking for the picky guy's favorites. Its great to have something new to try with easy directions......Thanks.
