Simple 30-minute Fish Sticks

While it’s easy to buy frozen fish sticks, it really doesn’t take much to make them yourself – just 6 ingredients and about 25 minutes from start to finish. This recipe uses U.S. Farm-Raised Catfish which is a lean fish and an excellent source of protein. And The National Audubon Society, Monterey Bay Aquarium, and Environmental Defense all recommend U.S. Farm-Raised Catfish as a safe environmental choice.
I like to eat these fish sticks either on their own or in a sandwich. To make a sandwich, use a nice crusty baguette, add lettuce and tomato, and use the Asian-inspired tartar sauce recipe for a punch of flavor.

Fish sticks in a flash
1/2 cup cornmeal
1/2 cup Parmesan cheese
3/4 teaspoon garlic powder
1/2 teaspoon salt
4 tablespoons canola oil
1 pound U.S. farm-raised catfish fillets, cut into 1-in thick strips
- Preheat the oven to 475°F.
- Lightly oil or coat a large baking sheet with nonstick cooking spray and set aside.
- Combine the cornmeal, cheese, garlic powder and salt in a medium bowl and mix well.
- Place the oil in a small bowl. Lightly coat each piece of fish in the oil and then roll in the breading until well coated.
- Arrange the fish on the prepared baking sheet and bake until golden brown, 10 to 12 minutes.

Asian-inspired tartar sauce
½ cup mayonnaise
1 teaspoon minced onion
2 tablespoon sweet pickles or sour gherkins
1 teaspoon minced cilantro
½ teaspoon Sriracha or Tabasco sauce
Combine all ingredients.
