Skillet Queso Fundido

There’s a definite love connection between children and melted cheese. No doubt, kids love cheese pizza, mac & cheese, nachos and grilled cheese sandwiches but have you ever thought to plan a one-pot dinner of melted cheese? It’s super simple and sure to become a new family favorite.

Our boys often look for the cheesiest item on the menu, whether a French fondue, Greek saganaki or Mexican queso fundido. Sometimes I wonder how they can eat so much cheese.

We’re lucky that they don’t just crave the sliced American version, but go for Parmesan, sharp Cheddar and even Manchego on occasion. We haven’t been successful with blue or goat, but we’ll keep trying.

Smoky Grilled Short Ribs

When I fire up the grill, I put everything on it I can find in the fridge. Not because it’s lots of work to build a charcoal fire, but because it’s sacrilege to let that fire burn without infusing its smoky goodness into as much food as possible.

On this same kettle fire, I cooked chicken thighs that were pulled from the bone and used in sandwiches and on salads. I cooked burgers for the boys’ lunch, and I smoked tomatoes, onions, Poblano peppers and pineapple for some sauces and a fruity pico de gallo I was inspired to make.

Tempura Night

One of the boys’ favorite dinners in Tokyo was an all-you-can-fry-and-eat tempura house … with a chocolate fountain for dessert, no less. Ben and Nick were more excited about the do-it-yourself dining than the menu.

After choosing skewers of chicken, beef, salmon, scallops, mushrooms, onions, potatoes and other deep fry-able treats, we dipped our fancy into bowls of ice cold tempura batter then into little cauldrons of hot fat nestled in the table tops. It’s the kind of place one should only ever go on vacation because otherwise it would form a calorie-heavy addiction.

Another year, another planting. It feels good to turn winter’s settled soil and plant spring seedlings for a summer harvest. Turning the soil mixes the nutrients and readies the ground for planting. For the boys and us, planting teaches the importance of sustainability and regenerating our mind, body and spirit.

Primavera means spring, and spring has officially sprung. It’s time to enjoy longer days, warmer temperatures and the beautiful spring produce in our markets.

In our house, we try our best to cook with the season’s crops, so when it comes to spaghetti, we make Bolognese in the winter, chilled pasta with roasted corn and chicken in the summer, and caramelized butternut squash with sage and hazelnuts in the fall.

So Primavera is the hit this spring and much lighter than its winter cousin. We use a fruity olive oil, tomato puree – because fresh tomatoes aren’t quite in season yet – and loads of green veggies.
