Southern Fried Chicken

When my niece first told us she was coming to L.A. for a visit last summer, the boys and I quickly made a list of things to do and places to eat. There’s certainly no shortage of tourist attractions or dining experiences in the City of Angels but the boys wanted to find the perfect spot to please their Southern cousin. They decided on The Ivy, not because it’s a paparazzi-heavy celebrity hangout, but because they have great fried chicken.

Fried chicken is a dish that has well stood the test of time…through generations of change and tradition. There’s a reason this comfort food can be found on menus from roadside diners to fine dining, and for a Southerner, it’s a dish that celebrates mothers, grandmothers and generations of cast-iron cooks.

Chicken Piccata – Easy Answer to a Busy Weeknight Dinner

When I’m having a busy week and need to get dinner on the table, I turn to an easy one-skillet dish, Chicken Piccata. It’s delicious and requires a few ingredients that I usually keep on hand (or on a short shopping list to pick up).

In this classic Italian recipe, a simple sauce of butter, lemon juice, parsley and capers adds a punch of flavor to chicken breasts. I serve it with a simple side of steamed vegetables or a spinach salad. Depending on my mood, I’ll sometimes add chopped artichoke hearts or green olives to the sauce.

Weekday Company? Try this Easy Moroccan Chicken

Recently, I came across this tattered recipe for Moroccan Chicken in a recipe folder. The recipe was from my friend Carol who was also my neighbor, living a few floors below us in the same high-rise on West 14th Street in New York City. It was one of the first things I learned to make when I started cooking.

This was long before the days when we were exposed to real Moroccan food, so today, we’d just say it’s loosely “inspired” by Moroccan cuisine. Nonetheless, it’s a great meal for company on a busy weeknight, since the chicken is marinated the night before and only needs to be floured, browned and popped into the oven to bake unattended while you set the table and tidy the house. Serve it with instant couscous, another quick-to-fix dish.
