A Simple, yet Sophisticated First Course

I love to start a diner party with a first course already set at each place when my guests come to the table. Of course, it has to be something easy to make, since there’s the rest of the meal to tend to.

This fennel salad is a lovely starter for a romantic dinner for two; you can double or triple the recipe for a larger group.

If you don’t have a mandoline to slice the fennel bulb, try using a sharp potato peeler or a sharp knife to create thin, almost-transparent ribbons.

Coleslaw – a Great Winter Side Dish

Most people think of coleslaw for summertime, but it’s an excellent salad year-round, since cabbage is one of the few vegetables in season during fall and winter. Cabbage is a highly nutritious vegetable and it makes a hardy and delicious salad. California raisins add color contrast and tangy-sweet flavor. This side dish should take no more than 10 minutes to assemble. Allow a half hour for flavors to blend and mellow.

Weekday Company? Try this Easy Moroccan Chicken

Recently, I came across this tattered recipe for Moroccan Chicken in a recipe folder. The recipe was from my friend Carol who was also my neighbor, living a few floors below us in the same high-rise on West 14th Street in New York City. It was one of the first things I learned to make when I started cooking.

This was long before the days when we were exposed to real Moroccan food, so today, we’d just say it’s loosely “inspired” by Moroccan cuisine. Nonetheless, it’s a great meal for company on a busy weeknight, since the chicken is marinated the night before and only needs to be floured, browned and popped into the oven to bake unattended while you set the table and tidy the house. Serve it with instant couscous, another quick-to-fix dish.

Kale – Delicious and Healthy

Forget how good it tastes – it has so many health perks that you can’t lose by consuming it. Kale has anti-cancer health benefits and cholesterol-lowering properties, to name a few.
