B,L,D,D Apple Fondue
Whether you’re picking from the tree or the produce aisle, apples are in abundance and fondue is a fun and easy way to eat ‘em up. So dunk your favorite variety into a cauldron of steaming sauce for breakfast, lunch, dinner and dessert!
BREAKFAST:
Apple and Cinnamon Crème Anglais Fondue
Serves 6
1 cup heavy cream
1 cup whole milk
1/3 cup granulated sugar
5 large egg yolks
½ teaspoon pure vanilla extract
½ teaspoon ground cinnamon
Apple wedges, for dipping
Combine the cream and milk in a saucepan and bring to a simmer over medium heat; remove from heat.
In a medium bowl, whisk together the sugar and egg yolks. Whisk in ¼ cup of the hot cream mixture, then pour the contents of the bowl into the saucepan and whisk over low heat until the custard begins to thicken, about 5 minutes. Strain the sauce through a fine mesh sieve into a heatproof bowl; whisk in vanilla and cinnamon. Serve with apple wedges for dipping.

LUNCH:
PB+J Fondue with Your Fingers
Serves 6
1 cup whole milk
One 11-ounce bag butterscotch morsels
1 cup smooth peanut butter
1 cup grape jelly
Apple wedges, for dipping (I like a tart Granny Smith for this one!)
In a medium saucepan, warm the milk over medium heat. Add the butterscotch morsels and cook, stirring often, until morsels are entirely dissolved, about 5 minutes; remove from heat. Whisk in the peanut butter until smooth. In a microwave-safe dish, microwave jelly until liquefied, about 2 minutes. Divide peanut butter fondue between bowls and use a spoon to swirl the jelly over top. Serve with apple wedges.

DINNER:
Grilled Cheese on a Stick Fondue
Serves 6
3 cups 1-inch sourdough bread cubes
Extra virgin olive oil, for drizzling
Salt and pepper
3/4 cup chicken broth
2 teaspoons cornstarch
8 ounces shredded Cheddar cheese
3 cups 1-inch apple pieces
On a baking sheet, toss the bread cubes with olive oil, salt and pepper. Bake at 375°F until light golden, about 12 minutes.
In a small saucepan, whisk together the chicken broth and cornstarch and bring to a boil over medium heat. Add the cheese, remove from the heat and stir until melted. Serve with apple wedges.
Alternatively, thread bread and apple pieces onto skewers and serve with hot cheese for dipping.

DESSERT:
Salted Caramel Apple Fondue
Serves 6
1 cup sugar
½ teaspoon salt
2/3 cup heavy cream
Apple chunks, for dipping
Chopped almonds, for sprinkling
In a medium saucepan, stir the sugar into 1/3 cup water and cook over medium heat, gently stirring occasionally, until the sugar is dissolved, about 2 minutes. Increase the heat to high and cook, undisturbed, until amber-colored, about 5 minutes. Remove from heat.
Using a wooden spoon, carefully stir 1 tablespoon of cream into the pan (be very careful – the contents of the pan will bubble up intensely and melted sugar is extremely hot.) Stir in a second tablespoon of cream, and then the remaining cream. Cook, stirring, over low heat until smooth and well-combined, about 3 minutes. Skewer apple chunks, dip into hot fondue and sprinkle with nuts.
