Avocado Soup – to Celebrate the Simple

It has been hot and super-hot in most of the country, not to mention what it going on with our economy, the world and the markets...not so hot!

Try to keep in mind that the simple things in life are not to be overlooked. We still have lots to be thankful for and if you have your health…well put simply, it does not get much better than that.

So much these days is out of our control but being thankful for what we still have and rewarding ourselves with good food is a good thing.

Make yourself something delicious, invite some friends and celebrate the simple! Here’s a refreshing soup for four to start you on your way.

Creamy Avocado Soup with Salsa
Makes 8 cups

3 ripe avocados
3 tablespoons fresh lime juice
1 cup plain yogurt
½ cup sour cream
4 scallions, green part only, chopped
4 tablespoons chopped fresh cilantro
1 teaspoon salt
½ teaspoon cumin
Tabasco to taste
1 cup small cherry tomatoes, quartered

Halve, pit and peel avocados and chop roughly. Puree in a blender with lime juice, yogurt, sour cream, 3 cups ice water, ¾ of the scallions, 3 tablespoons of the cilantro, salt, cumin and Tabasco to taste.

Toss tomatoes with remaining 1 tablespoon cilantro.

Spoon soup into bowls and top with tomato mixture and remaining chopped scallions. Serves 4
