Celebrate the Fourth with Corn

Too hot to cook…so don’t! Take it outside along with the rest of your Fourth of July BBQ dishes.

Now is the time to use the best produce the season has to offer and in this case, it’s corn, which is a bit early this year. It is the perfect pick of the crop right now.

Since my house is surrounded by fields of corn it only seems appropriate to celebrate the Fourth with some of the earth’s golden bounty.

Take the corn outside and give it a brief spin on the grill along with a poblano pepper and a good set of long tongs. This salad takes only minutes to prepare. My real goal is to give the corn a slight smoky flavor to complement its inherent sweetness and accent it with the slight heat of the poblano.

Doing Breakfast Justice

We are in for a ton of rain this weekend…some folks would not be very happy with that forecast. Not me, as it gives me license to stay in the kitchen all day and cook up some delicious grub.

Also, the weekend is when I have the luxury of time to really do breakfast justice. No eating a hard-boiled egg on the run, my favorite go-to breakfast (especially when hand- picked from my own chicks).

Speaking of chicks, 10 more came in the mail this week to add to my diminishing brood from two years ago. So in honor of the new chicks, the rainy weekend and doing breakfast right, here’s my take on salsa and eggs, where the eggs are actually baked in salsa and served with corn tortillas, mashed avocado and with lots of chopped cilantro sprinkled on top for a fresh hit.

Easy Fish Tacos to Celebrate Summer

I remember perusing the farmers’ market eight months ago and wistfully bidding farewell to my favorite summer produce. There are seasonal gems all year round, but without a doubt summer is the most vivacious. I was so happy to go to the farmers’ market last week and take in the renewed abundance of color and variety – fresh tomatoes, asparagus, cherries and lovely golden peaches!

To me, these tilapia tacos with peach, corn, and black bean salsa are the perfect way to welcome the season. Nothing says summer quite like a lovely ripe peach and fish tacos instantly making me feel like a sun-kissed surfer. Not only are the tacos a refreshing, yet surprisingly filling meal, but they are quick to make so you won’t have to be indoors too long, missing the sunshine.

Too Many Tomatoes

Tomatoes are dropping in my garden…literally. My garden includes everything from heirloom varieties to the humble cherry. So, when burdened (gifted) with the luxury of gorgeous home-grown tomatoes, I say, let the salsas begin!

With infinite salsa variations possible, I change it up, given the offerings at the farmers’ market or what’s in my fridge. You could add beans, corn or grilled veggies, to name a few tasty options.

Avocado Soup – to Celebrate the Simple

It has been hot and super-hot in most of the country, not to mention what it going on with our economy, the world and the markets...not so hot!

Try to keep in mind that the simple things in life are not to be overlooked. We still have lots to be thankful for and if you have your health…well put simply, it does not get much better than that.

So much these days is out of our control but being thankful for what we still have and rewarding ourselves with good food is a good thing.

Make yourself something delicious, invite some friends and celebrate the simple! Here’s a refreshing soup for four to start you on your way.
