Super-Speedy Dinner for One Features Naan Bread

My super-speedy dinner for one this week requires the aid of a delicious flatbread such as naan bread, sold in the bread aisle of the supermarket. There's also a whole wheat and roasted garlic version. However any flatbread will work for this recipe.

I try to keep a couple of packages in my freezer and before I leave for work in the morning, I simply place one in the fridge so that it is defrosted and good to go when I get home.

This is a great way to use up whatever leftovers or condiments are in your fridge. Then simply add stuff from the pantry to create a flatbread pizza for one. It's also good as a quick lunch or as appetizers for company and unexpected guests.

I love to cook these on the grill but a grill pan works as well.

Grilled Mediterranean Pizza
Serves 1 or 2

1 small jar (7 ounces) roasted bell peppers, rinsed and drained
1/4 cup finely grated Parmesan cheese
1 tablespoon olive oil
Salt and pepper
Olive oil spray
1/2 lemon, sliced
6 marinated artichoke hearts, drained and patted dry
1 naan bread
1 cup baby spinach
4 pitted kalamata olives, halved

Heat grill to medium. Puree peppers in a blender with Parmesan and olive oil. Season with salt and pepper.

Spray lemon and artichoke hearts lightly with olive oil spray and grill, turning, until golden brown, about 3 minutes. Transfer to a plate.

Spray bread with olive oil spray and grill, turning, until golden brown on underside, about 2 minutes. Flip over and spread with pepper sauce. Scatter remaining ingredients on top and grill until underside is golden brown, about 2 minutes.

Cut into wedges and serve with salad.

Topping Options:

  • Shredded rotisserie chicken
  • Crumbled feta or goat cheese
  • Sliced red onion
  • Crumbled cooked chorizo or sausage
  • Flaked cooked tuna
  • Pesto or marinara sauce instead of the pureed red pepper sauce
