Snake Dogs

Stretching for miles in a sprawling Los Angeles canyon is Griffith Park. We love Griffith because there’s an observatory, museums, hiking, biking, swimming, horseback riding, a working historic train, and a multitude of snack shops that keep us well nourished and hydrated during our strenuous weekend activity.

The crown jewel of snack shops is “The Trails,” a shack built to blend into the landscape. It’s the California hippie version of Manhattan’s Shake Shack. If you’re in Griffith and can’t find “The Trails,” just look for the long line of people waiting for a slice of pie, a lavender cookie, a sprout sandwich, or if you’re Ben and Nick, a Snake Dog.

Snake Dogs are like pigs in a blanket, only much cooler – a frankfurter wrapped in a coil of puff pastry, then baked so it looks like a snake slithering across the picnic table. We’ve started making Snake Dogs at home. Here’s a recipe so you can pack Snake Dogs in the picnic basket for your next trip to the Griffith Park where you live.

Summer Nights at the Bowl

Five years ago we celebrated our first Fourth of July in L.A. at the Hollywood Bowl and it quickly became our patriotic tradition. Every year we go to the iconic amphitheater, nestled in the beautiful Hollywood Hills, for the concert and fireworks. That fateful first year, as the crowd sang along to I Love L.A. with Randy Newman, we realized Los Angeles was going to be our home for years to come.

One of the fun things about The Bowl is you sit in boxes with tables and chairs, and are free to bring in picnic food, wine and any myriad of treats you can manage. This year, in the spirit of Yankee Doodle, the boys made Snickerdoodle Shortcake…fresh summer strawberries piled on Snickerdoodle cookies and topped with sweet whipped cream.

Arroz con Pollo on the Grill

This past Sunday, we enjoyed a simple Father’s Day at home…Marilyn, Ben, Nick and I. My only responsibility for the day was manning the grill. But instead of my usual steaks, burgers or fish fillets, I grill-smoked chicken thighs, then put my paella pan directly on the hot charcoal and made rice for an outdoor Arroz con Pollo.

Almost every culture has a version of chicken and rice, which is simple comfort food. I usually think of it as a Caribbean and Latin American dish, but Spain’s signature paella can be chicken and rice and I recently had congee at a Chinese dim sum joint. Besides some ingredients I couldn’t identify, the chicken feet and glutinous rice made this savory porridge another version of chicken and rice. The common thread is that the chicken is at least partially cooked in the rice, and the rice is usually wet, like porridge.

Cheese Plate on the Fly

All this week, Special Fork bloggers will be sharing recipes for vacation cooking. And to celebrate summer vacations, Special Fork is giving away a beautiful, English-style picnic basket fitted with service for four by Picnic Time. It’s easy to enter the sweepstakes.

We love going on vacation, though we can typically only steal away for a couple of days here and there. Ten minutes west is Santa Monica and an hour up 101 is Santa Barbara. Both quintessential California beach towns are vacation destinations for travelers around the world. Since we don’t have to buy plane tickets or even much gas to vacation in these locales, we justify our splurging on nice hotel rooms and delicious local food.

The other great thing about vacationing close by is friends can pop in for an afternoon play date or even to spend the night. We know where all the great food shops are in each town for picnics and snacks. My favorite snack by far is a casual cheese plate; a variety of soft and hard cheese, olives and fresh fruit all on a quick and easy platter – leave your design aesthetic at home, the goal here is assemblage not presentation.

Jen’s Cinco de Mayo Kentucky Derby Celebration

A few weeks back my cousin, Jenifer, posed a challenge: “Cinco de Mayo AND Derby Day on the same day?!? Might I beg...er, politely request, Andrew, that you post a few menu suggestions and recipes on Special Fork? Keep in mind, we don’t expect to be 100% sober on this magical day that honors both margaritas and mint juleps. :)”

So Jen, this one’s for you. No confusion or crazy fusion, just accommodation of both celebrations, side by side. Here are two of my favorite drinks and dips for your table this Saturday. Spiced Margaritas served with chips and Pineapple Pico de Gallo, and Mint Juleps served with Benedictine, crackers and crudités.
