When my family discovered pulled pork sandwiches at a local barbecue restaurant, they asked me if I would make them at home and I said, “Well, maybe.” But every time I thought about marinating, wet mopping and slow roasting a big chunk of meat for hours, I decided to just take them back to the restaurant.

Then on one visit we noticed something new on the menu, pulled chicken. It was delicious and I said, “This I can make!”

Roasted Herb Chicken with Pistachio Salsa

Roasted chicken thighs are easy to make, but ordinary. Dress them up by rubbing an herb paste under the skin to season the meat and create a ton of flavor without a lot of work. It’s important to use fresh herbs when making the paste because fresh herbs have a brighter, cleaner flavor than dried ones.

Use a mortar and pestle or finely chop the herbs together to release the oils, intensifying the fragrance. This recipe uses chicken thighs but you could use skin-on chicken breast or even a whole chicken. The key is to separate the chicken skin from the flesh, leaving the sides of the skin attached, creating a pocket for the herbs, to seal in the flavor.

In Love with Rosemary

I am in love with rosemary – the plant, the flavor and the look of it! Unfortunately I haven’t had my usual luck with growing this grand plant as I have had several of them die on me recently.

Rosemary plants need lots of water but only after they run dry. But if you’re not around…that’s where it all goes wrong! The plant will only take so much stress. Once is enough or if you are lucky, twice, with this beauty.
