Noodle Pillows

We’ve just returned from Japan full of noodles. The boys ate noodles for breakfast, lunch and dinner and even took a ramen noodle cooking class.

And so I started getting sentimental about my noodle pillow past at The China Moon Café where I was the chef de cuisine … a very stylish Chinese restaurant before Chinese food was stylish, owned by Barbara Tropp, who was dubbed the Julia Child of the Chinese kitchen. BT, who has since passed away, was a dear friend and mentor. I still ask BT for advice on all flavors Asian.

The kitchen was in the basement at the bottom of a very steep and narrow staircase that BT painted bright red. One evening I was making noodle pillows downstairs while BT was having dinner with Jacques Pépin upstairs.

Chinese Noodles

There’s a Chinese noodle house east of L.A. called Din Tai Fung. Their specialty is dumplings and boy, are they special – glutinous rice shaomai, green melon and shrimp bundles, and tiny soup dumplings bobbing in clear chicken broth, to name a few of our favorites. Din Tai, as we call it, is a regular and possibly favorite stop on our weekend rotation of dim sum houses.

The place is sleek, clean and crowded with a large tinted kitchen window that gives a shady peek at cooks working shoulder to shoulder rolling noodles, stuffing discs of dough and crimping them into round, crescent and purse-shaped dumplings.

At the Winter Fancy Food Show in San Francisco

Many shows ago, I gave up on trying to make trend sense out of what I saw and tasted at the Winter Fancy Food Show. A trade show for gourmet retailers, the show covers 196.000 square feet at Moscone Center in San Francisco, embracing 1,300 exhibiting companies and attracting more than 17,000 attendees.

There’s simply too much real estate and too many disparate offerings to conveniently pigeonhole. So instead of trying, I just walk the show, see what I see, taste what I taste, and refuse to be overly ambitious in what I take away from the experience. Yesterday, I enjoyed the company of @JustinMcNeil of Delin8ted as I walked the show. He’s a new friend I met on Twitter, tweeting about #NASFT and #FancyFoodShow over the weekend.

Japanese Food Fast

Every culture has its convenience foods. Having just returned from Japan, I’d like to share a Japanese quick meal, a simple noodle soup, using just a few ingredients from an Asian grocery. This main dish soup should take less than 15 minutes of total time to prep and cook.
