Spare Ribs, Asian Style

In our house, “spare ribs” in the summer means succulent meaty bones on the grill with a spicy rub or barbecue sauce. But come fall and winter, when we don’t grill as much, “spare ribs” is something marinated, then slow-roasted in the oven.

Chinese spare ribs are cut across the bone so you can pick up the pieces with chopsticks. You can find this type of spare ribs in a Chinese butcher shop or get your supermarket butcher to cut them for you. Chinese spare ribs always seem to be pork ribs, the better to add some sweet-tart flavors to complement the richness of the pork.

Going Bananas

Growing up in Hawaii, I know a thing or two about bananas. We ate enough of them as kids. Apple Bananas, Bluefields, Cavendish…so many varieties thrive in tropical climates. And mostly we got them for free, a gift from somebody’s backyard.

We ate bananas in many ways – fried in butter with brown sugar for dessert, suspended in glistening Jell-O for a snack or scattered over cornflakes for breakfast.

Brown Bag Blues? Try this Quick and Easy Pasta Dish

In these economic times, it makes sense to brown bag your lunch to save money. But packing a sandwich every day can get pretty boring.

For a change of pace, invest 15 minutes to make a simple vegetarian pasta dish. Even if you’re not a vegetarian, do give this healthy and delicious meal a try. Garlic, basil and sun-dried tomatoes add so much flavor, you’ll never miss meat.

Surprise! These ‘Crab’ Cakes are Made with Zucchini

Cherie Pollock of Orland, California, is one of those competent, talented home cooks who can whip up a beautiful gazpacho for 20 and still bake three pies from scratch for lunch. So when she told me about a recipe for ‘crab’ cakes made without crab, of course I was intrigued. Cherie didn’t know the origins of the recipe; she had received it from a friend.

I was skeptical of the outcome, at first. And had the recipe come from anyone but Cherie, I don’t know if I would have tried it. But I did yesterday, and when served hot and crisp, the patties were really quite good. And yes, they did taste surprisingly like crab cakes.

A Look at Special Fork’s New Office

We’ve been laboring hard, getting Special Fork off the ground. And this summer, we renovated our old kitchen to make a real office for Special Fork.

Until then, we had two kitchens: our remodeled one where you see us doing food demos for Special Fork’s Video Fridays and our old kitchen, which was still functional. We removed the appliances, chipped out the wall tile and refinished the floor. It was an exciting process.
