Simple Entertaining: Wonton Cups

When it comes to entertaining, I have two choices: I can knock myself out doing a menu to impress, or I can take the simple way out.

I look at it this way. I can have more people over more often with a casual menu. Or I can work myself into a frenzy to entertain a few very well.

I tend to do both, actually, but recently I’ve gone the simple route. A simple menu might start or end with versatile wonton cups that are a snap to make. They can be an appetizer or dessert, depending on whether the filling is savory or sweet . The recipe is easy to double or triple, depending on the size of your crowd.

Rolled Pork Gyoza

While dining at one my favorite neighborhood restaurants, I strayed from my usual hot pot and opted for an order of the TonTon Famous Gyoza. I was expecting a steaming plate of pleated dumplings in the classic potsticker form, but instead, I was presented with a sizzling platter of what looked like Asian-style taquitos.

These simple rolled dumplings were a revelation. Not only were they much easier to prepare than traditional Gyoza (making them perfect for a weeknight meal), they also had twice as much of the dumplings’ tastiest feature, that golden-crisp skin. Yum!

Easy Ravioli – the Secret is Wonton Wrappers

Here’s a ravioli that even cooking newbies can make because it uses wonton wrappers instead of handmade ravioli dough. You cook up a simple pumpkin-walnut filling, spoon a tablespoon between two layers of wonton wrappers, and, using your fingertip, seal with water.

Cook up your plump pillows of dough in a pot of salted boiling water for two minutes and serve with a brown butter and walnut sauce. It’s that easy.

If you keep a package of wonton wrappers and a bagful of walnuts in your freezer, and a can of pumpkin in your pantry, this dish can be your go-to meal, anytime.
