We’ve been working a lot with wonton wrappers these days because they’re so versatile and easy to use. Recently, my wife Lynn, who is from Thailand, showed us another great way to use the wrappers: as a crispy blanket for marinated shrimp.

These are delicious, and once you get the hang of wrapping the shrimp, they’re easy to do. But don’t try this recipe for the first time when you’re having a party because it takes a little practice.

Cheese-Stuffed Mushrooms

One of the first appetizers I learned to make as a newlywed was Cheese-Stuffed Mushrooms. I copied the recipe from a friend in New York City, who had made it for a party, and I was impressed. While I was new to cooking, this recipe is the kind that almost guarantees success – quick and easy, delicious, and with make-ahead potential so I wouldn’t be flustered just before guests arrived.

When buying mushrooms for this recipe, look for ones that are about the same size so they finish cooking at the same time and look attractive together on the serving platter. If I have to buy them prepackaged, I buy an extra package so I can sort the mushrooms, setting aside the odd sizes for another use. I love mushrooms and I can easily add them sliced raw in salads, sautéed in omelets, simmered in soups…you can never have too many mushrooms in your fridge.

Simple Entertaining: Wonton Cups

When it comes to entertaining, I have two choices: I can knock myself out doing a menu to impress, or I can take the simple way out.

I look at it this way. I can have more people over more often with a casual menu. Or I can work myself into a frenzy to entertain a few very well.

I tend to do both, actually, but recently I’ve gone the simple route. A simple menu might start or end with versatile wonton cups that are a snap to make. They can be an appetizer or dessert, depending on whether the filling is savory or sweet . The recipe is easy to double or triple, depending on the size of your crowd.

Potluck is not a Bad Word

“Potluck” the word strikes fear in many. What do I bring? What is everyone else bringing? How much food do I need to make?

I, however, embrace the potluck. The more the merrier! I love that you get to try all sorts of different dishes from all cooking skill levels. (Just don’t be that person who brings the pre-packaged veggie dip tray from the supermarket.)
