Sweets in One or Two Bites

During the week, I mostly focus on the savory foods such as what to have for the day’s three meals: breakfast lunch and dinner. I am lucky enough not to have a severe sweet tooth but do on occasion crave a sweet bite of something which is usually satisfied by fruit or a bite of chocolate.

I love to bake but living alone, that can be a dangerous thing to have baked goods sitting around, like leftover chocolate cake, cookies, pies or tarts. If I had any of that hanging around, I might develop a sweet hankering.

So instead, I keep bars of chocolate, chocolate- or yogurt-covered raisins and mini tart shells…little sweet bites that you keep on hand for yourself or when someone might stop by. I recently discovered these mini bite-size sweet tart shells from Clearbrook Farms.

The ingredient list is short and consists of primarily seven ingredients,  which means they are not filled with a lot of unnecessary and bad for you additives and preservatives. The shells are like a very tender shortbread pastry. Two shells are just 80 calories and have 2.5 grams saturated fat.

Use your imagination and fill them right out of the box with your favorite toppers, such as melted chocolate, caramel, whipped cream, dried fruit, toasted nuts or even heat them in the oven and fill with cheese and jam. Below is my sweet take for one, with company, on the light side….

Mini Sweet Tart Shells Filled with Fruit and Cream
Serves 2 (halve recipe to serve one)

3 tablespoons Greek-style, 2% yogurt
1 teaspoon honey
4 slices mini kiwi or 1 slice regular, chopped
1 tablespoon chopped pineapple
5 blueberries
3 raspberries
4 ready-to-fill, mini bite-size sweet tart shells, such as Clearbrook Farms brand

Stir together yogurt and honey. Fill shells with yogurt mixture. Top with fruit. Serve immediately.
