Potluck is not a Bad Word

“Potluck” the word strikes fear in many. What do I bring? What is everyone else bringing? How much food do I need to make?

I, however, embrace the potluck. The more the merrier! I love that you get to try all sorts of different dishes from all cooking skill levels. (Just don’t be that person who brings the pre-packaged veggie dip tray from the supermarket.)

Potatoes on the side, please

Often when I’m cooking, I get so caught up in the main dish that I run out of time or forget to make a side. There’s no excuse for skipping a side dish with these Parmesan Potato Wedges. The dish is extremely simple so you can work on it in between tasks for the main course. The other great thing is that this dish is cooked in the oven so I don’t have to watch it constantly and it frees up precious space on the stovetop.

Red bell peppers add color and a bit of sweetness and the Parmesan adds a nice cheesy tang.

Serve a Simple Strata

Strata, similar to a savory version of bread pudding is a great way to use leftover bread. This simple strata combines bread, eggs, bacon and dried plums to make a dish fit for brunch. Or serve it as a side dish for dinner.
