Cockles – Perfect for One...or Two

Just call them the other littleneck clam – New Zealand littlenecks (cockles), that is. They’re a bit sweeter and more tender than the larger, better-known littlenecks, but only if you are careful how you cook them.

I am big on buying local but I make occasional exceptions when it’s an ingredient that can’t be sourced locally, no matter what the season. These little (1/2- to 1-inch in diameter) briny jewels are flown in live from New Zealand where they play a critical role in filtering the water. Amazing!

Pork Tenderloin – Better with Bacon!

I’ve heard it said often that everything is better with butter. With that, I can’t disagree! However, I also like to think that everything (almost) is better with bacon – especially pork tenderloin.

Pork tenderloin is a leaner cut of meat and that’s one of the major reasons it’s so popular. (Quick-cooking is probably a close second.) A few strips of bacon wrapped around a tenderloin can make a good thing even better.

This no-fuss recipe, always a popular one with my family, also works well for a dinner party. It’s just as easy to cook two tenderloins as it is to cook one!

Tomato Season’s BLT

Around this time last summer, I got a sandwich that blew my mind. I always love a BLT for its addictive combination of meaty bacon, crisp lettuce and sweet-tart tomato. But this particular BLT was all about the “T;” 3/4-inch-thick slices of sun-ripened tomato were the meat of this stunning sammy. This weekend, I returned to see if the best-ever TBL (Tomato, Bacon and Lettuce) was back in season; I was in luck.

Lobster Rolls on the Grill

Everyone knows that the best thing to do with leftover lobster is make lobster salad. It’s so good, in fact, that when shopping for my annual Cape Cod lobster boil I always buy a couple extra crustaceans just to make sure there’ll be enough pickins for a lobster roll lunch the next day.

Served hot or cold, with creamy mayo or drawn butter, lobster rolls have captured New York foodies in their tasty clutches. Having partaken in a gut-busting lobster crawl across the island of Manhattan, I can tell you that I’m partial to Luke’s Lobster, which serves Maine style rolls – a butter-toasted bun piled with chunks of chilled claw and knuckle meat, topped with a light smear of mayo and a hit of their “secret” spice blend.

BLT Pasta for One

With the hope that spring is actually on its way I turn to food that incorporates fresh herbs and veggies. However it is still winter so I am bridging the gap with a BLT pasta for one.

The combination of bacon, lettuce and tomato is undeniably a delicious combo and can take many forms. There is even a cookbook named simply The BLT Cookbook by Michele Anna Jordan.

Who doesn’t like bacon? Apparently a lot of us do – otherwise, why would there be so many bacon-of-the-month clubs? And who knew there were so many flavors...peppered, applewood-smoked, honey, BBQ, some made with heritage pig breeds such as Berkshire, Tamworth or Duroc. Yummmm!
