Easy Fish Tacos to Celebrate Summer

I remember perusing the farmers’ market eight months ago and wistfully bidding farewell to my favorite summer produce. There are seasonal gems all year round, but without a doubt summer is the most vivacious. I was so happy to go to the farmers’ market last week and take in the renewed abundance of color and variety – fresh tomatoes, asparagus, cherries and lovely golden peaches!

To me, these tilapia tacos with peach, corn, and black bean salsa are the perfect way to welcome the season. Nothing says summer quite like a lovely ripe peach and fish tacos instantly making me feel like a sun-kissed surfer. Not only are the tacos a refreshing, yet surprisingly filling meal, but they are quick to make so you won’t have to be indoors too long, missing the sunshine.

Crazy for Quinoa

Like most people with a tight schedule and long work days, the last thing I want to do when I come home is spend a lot of time in the kitchen making dinner. Recently I’ve rediscovered the versatility of quinoa; a delicious, quick cooking, and easy to prepare grain-like edible seed.

Quinoa is packed with protein, and is a good source of iron and other minerals, making it a great addition to salads, soups, veggie burgers, breads, and all sorts of baked goods. My favorite way to use leftover quinoa is to add it to a whole wheat waffle batter, a special breakfast to enjoy on my days off.

This ancient grain isn’t only a side dish anymore! Here I’ve mixed quinoa with a few simple ingredients and spices to make a quick and satisfying weeknight meal. You can customize this recipe by adding or omitting as many vegetables as you like, or even throw in leftovers from yesterday’s dinner.

These Bean Burgers are Good!

I love a juicy hamburger and until recently, the idea of a bean burger left me cold. However, recently, I came across a recipe that intrigued me so I had to try it.

I’m pretty good at anticipating the outcome of a recipe by reading the ingredients and method. This one, with its combination of flavors and textures, really appealed to me. I thought it would be delicious – and it was! It’s healthful, too.

So I’m sharing this recipe with you and if you’ve never had a bean burger before, or had one you didn’t like, give this one a try. I think you’ll be pleasantly surprised.
