Salad, Many Ways

I was back at the market this past weekend to make all things with salad. I often whip up a small salad to have with dinner but on other nights, salad is the star of the plate.

Radishes, salad greens and fresh herbs are ingredients that are popping up super-fresh at markets everywhere. So my recipe this week is basically a celebration of leafy greens with some adornments. Think of the salad as a supporting cast to the main dish.

Topping a grilled chicken breast or steak with salad is simply delicious…you get the crisp texture of fresh greens and veggies, and then the acidity from the vinaigrette, which results in a perfect compliment to the rich flavors of the grill and the meatiness of a steak.

A Feast for One

I have always enjoyed feasts big or small, no matter what the number in courses or number of guests. Tonight I’m celebrating a feast for one!

When I first lived in New York City, I shared a two-bedroom apartment, #13 (apparently this building had not gotten the notice that this was an unlucky number), in a fourth- floor walkup with a lovely person I knew from high school.

While she was out training for the next marathon, I was home making a three-course dinner for myself. Table set with candles burning.

Salmon en Papillote

This is my go-to recipe at least once a week. The term "en papillote" is French for cooked in parchment paper. It's simple, yet elegant, and this dish is packed with flavor. All the ingredients cook together in the same amount of time and the parchment paper locks in the flavor. It’s super-fast, super-easy and leaves you with virtually no clean up.

I have made this dish countless times, changing the ingredients, depending on what I have on hand. This version is Mediterranean in its inspiration, but I often make it with Asian flavors using shiitake mushrooms, scallions, ginger and soy sauce. I used salmon fillets for this recipe but any type of fish such as halibut, sea bass, sole or snapper are great alternatives.

Kitchen Yoga

Cooking for one is highly underrated and might seem to some a tad lonely. My day job is to create recipes to serve at least four or more people and sometimes involves working in the company of others. So I embrace MY time alone in the kitchen where the only sounds I hear are from my knife chopping and slicing or something sizzling and speaking to me from the pot on the stove.

Being alone in the kitchen is when I can truly lose myself in the ingredients and smells of conjuring up a nourishing meal. Everything else that happened that day gets drowned out by the current task at hand. It’s not unlike a runner who gets in the zone on the track and their single focus is to move forward.

Fish Tacos – the Perfect Meal for One

Fish Tacos...where have you been all my life! They are so delicious and so fast. Must-haves are good tortillas, great wild-caught fish and herbs. The rest is garnish!

I was developing a fish recipe and had some leftover cooked…yes, leftover fish can sing and this filet did.

Fill a good-quality taco shell with some great leftover or fresh-cooked fish, fresh herbs (fill with whatever you have on hand in the garden or otherwise...improvise, improvise), lovely, perfectly ripe avocados and some fresh lime and dinner is…so glad I stayed home!
