I have written many times about my summer vacation in Maine and the food that I've enjoyed there. Since August is still a long time away for me to grab a real Maine lobster roll and since lobsters, at the moment, are a bit pricey, I decided to make a roll with a more affordable filling. Also, my other inspiration was that I found in my local Hannaford’s, top-split hot dog rolls, more commonly known as New England-style rolls.

The spring rains have begun as well as some amazing thunder clappers. This past week delivered not only tons of rain and high winds but lots of buds and flowering bushes and green grass. This is my favorite time of year (fall is a close second).

Today is a day of gardening and digging out of last year's twigs and fall leaves that found there way into my garden to form a protective blanket until spring really arrived. So maybe it's a tad early, as I know that up here in the Hudson Valley, they say, do not plant or uncover until frost is really a distant memory, which locals say is around May 15.

Very Berry Fruit Salad

While it’s still a bit blustery around here, we have glimmers of warm sun and temperatures. Just this past weekend, I noticed all of the buds struggling to get some attention and warmth.

My hydrangea plants are already budding and my addiction to tulips is unparalleled this year with a plant or vase of them in practically every room. So if spring hasn’t arrived just yet outdoors, at least I’m getting a dose of it indoors.

I can’t wait for the farmers’ market to open in Pennsylvania, with all of the fresh herbs, produce, plants and fruits that will be laden on every farmer’s table. I haven’t had a fruit-full year in terms of eating enough fruit. So in an effort to jump-start my intake, I made a fruit salad this past weekend for company, to round out my brunch of eggs, bacon, and breads.

Corned Beef and Cabbage Leftovers

As mentioned before, my mom’s a Murphy so when St. Patty’s Day rolls around, we all get cooking some corned beef and cabbage.

I’m lucky enough to have a store up the road that corns its own beef and even luckier that I got the last piece they had. Only problem was that it was a five-pound piece and not really conducive for one or two bites.

I do love great leftovers and this dish just gets better with age. Only thing is, after two nights of the same, I needed to change it up a bit. I confess I did freeze part of it to make some old-fashioned corned beef hash for a great weekend breakfast or brunch, but what to do with the rest of the bits such as the little bit of corned beef and then the broth, cabbage, carrots and potatoes?

Lasagna Love

Lasagna is one of those Italian American comfort foods that has been reworked into a million different recipes over the years. When I visited Italy years ago I was surprised to find that the Italian version was very different from its American adaptation.

The lasagne that I find more often in the States is a towering wonder of cheese and meat-filled sauce, not to mention some noodles. In Italy, it’s a bit more refined and made more simply with super-tender, melt-in-your-mouth noodles and generally very little cheese, if any at all.
