Turn Leftover Chicken into a Delicious Pasta Dish

I’m not a big fan of leftovers so any time I can repurpose them and make a new dish is a win in my book. Chicken Tetrazzini is a great example – comfort food that uses leftover chicken (either rotisserie or roast). This is one of my favorite dishes and I have been known to polish off an entire recipe by myself.

Life is Complex, Make Dinner Simple

At the end of a busy day, the last thing I need is more work. And let’s face it, dinner often feels like work. When I’m feeling uninspired and on the verge of ordering takeout, I make a sandwich. But not just any sandwich, a special dinner-worthy sandwich of ham and Swiss dipped in egg wash and grilled.

If you can manage making grilled cheese, even when you’re tired, you can handle the French version with a fancy name… Croque Monsieur. It’s adored by everyone in my family. We eat the Croque with a simple salad for a delicious bistro-style meal.

Sausages from Saylor’s

Okay, I know it does seem like I am on a tangent of sorts…sausage + pasta + tomatoes…agreed!

It just so happens that ½ mile down the street where I live is an amazing food shop called Saylor’s that is owned and run by a couple; he is Penn Dutch and she is Italian. You tell me, how could they not have amazing food and great sausage? It really was one of the reasons that I rented ye ole house.

I Heart Carbs

Like the allure of meat on meat (think bacon burger), one carbohydrate can only improve with the addition of another. Strangely enough, it was during a starch-starved year in San Francisco, where no excess of sushi or burritos could curb my hankering for a decent slice of pie and a boiled bagel, that I discovered the ultimate carb combo: potato pizza. The tough-crusted wedge may not have scratched my East Coast itch, but it securely rooted the idea of tubers on toast.

Tropical Ice – Conjuring up a Taste Memory

The other day, I was idly looking at papayas sitting in the fruit bowl on the kitchen counter when they triggered a taste memory:  the intense flavor of papaya transformed into something smooth, creamy and icy. 

Funny thing is, I could remember the taste and texture, but it took me awhile to conjure up the recipe in my head.  It niggled at me until I let the memory play out...the kids were little, we lived in a condo on Cathedral Hill in San Francisco and I used to make this ice for company all the time.
