Try a Kitchen Sink Dinner: Baked Stuffed Potatoes

Okay, I admit I have not been doing that much cooking for myself lately…well at least not what most people would consider a proper meal. Lately, it has been kitchen sink dinners (translation: whatever bits and pieces that are kicking around or still kicking in your fridge).

These bits are highly underrated. You will be surprised at how inventive you can be when you have limitations and with only a few good ingredients still standing. In my case, leftover ground bison meat (from the sliders I made last week), 3 baking potatoes, 1 shallot, garlic and pantry stuff….

Thanksgiving Leftovers, Chinese Style

We always buy a big turkey for Thanksgiving, the better to have leftovers for ourselves and our guests. As soon as the feast is done, out come the baggies and plastic containers so we can apportion the food and get them back in the fridge to chill (for food safety’s sake) until guests depart.

I separate the nice turkey slices first. Then I bag the smaller chunks. And finally, I wrap the carcass in plastic wrap.

The next day, we’ll have sliced turkey breast on split baguettes spread with cranberry sauce for lunch. For dinner, we like hot turkey sandwiches served open-faced, drizzled with leftover gravy and stuffing on the side.

Great Steak!

Sometimes, I just crave a great steak. And lucky for me, my husband Steve is a great steak griller.

Steak is our go-to instant meal, since it requires no prep (unless you’re using a less-tender cut and need to marinate it) and no dirty pots or pans. We fire up the grill, put the meat on and dinner’s on the table in no time.

Too Much Bread!

I always overbuy baguettes for a party. Bread is cheap and I’d rather have too much than not enough.

But then I’m stuck with the leftovers. Any sane person would toss the remainder but I always bag the leftovers, intending to do something with them. I hate waste.

Waste Not, Want Not!

I always feel virtuous when I clean out the fridge. We have a big Sub-Zero and things can get buried if you aren’t paying attention.

I hate wasting food but admit I do my share. When I clean out the fridge, though, I have a chance to redeem myself.
